St. Patrick’s Day weather here in Ireland typically goes one of two ways. We either get the sun “splitting the stones” and everyone enjoys the day immensely. I remember a famous year where my teenage self managed to get a sunburn after being caught out at the parade without suncream!
More typically, St. Patrick’s Day dawns wet and windy, with a few memorable years even bringing sleet and snow to test the mettle of hardy parade participants and even the spectators! Weather in Ireland is famously unpredictable and March is well known for being the worst of it!
The recipe for Day 3 sets you up perfectly for those wet, windy, and cold St. Patrick’s Day celebrations! Like a hug in a bowl, it can thaw you out after a chilly morning at a parade, or set you up for the revelry of the evening!
This is Irish comfort food and much tastier than the simple ingredients list makes it sound. We have ours with some lovely brown bread topped with a generous spread of good Irish butter. Bliss!
Better still it is easy to make with a handful of ingredients that most will have in their cupboard. Although you will need some manner of blender.
