Irish comfort food
St. Patrick’s Day weather here in Ireland typically goes one of two ways. We either get the sun “splitting the stones” and everyone enjoys the day immensely. I remember a famous year where my teenage self managed to get a sunburn after being caught out at the parade without suncream!
My daughter and I were able to march in our local St. Patrick's Day parade without coats in 2025. Nothing but clear blue skys all day... and suncream under the face paint, I learned my lesson. And yes, even unicorns are Irish on St. Patrick's Day!

More typically, St. Patrick’s Day dawns wet and windy, with a few memorable years even bringing sleet and snow to test the mettle of hardy parade participants and even the spectators! Weather in Ireland is famously unpredictable and March is well known for being the worst of it!

Potato soup for 6 hungry people
The recipe for Day 3 sets you up perfectly for those wet, windy, and cold St. Patrick’s Day celebrations! Like a hug in a bowl, it can thaw you out after a chilly morning at a parade, or set you up for the revelry of the evening!
This is Irish comfort food and much tastier than the simple ingredients list makes it sound. We have ours with some lovely brown bread topped with a generous spread of good Irish butter. Bliss!
Better still it is easy to make with a handful of ingredients that most will have in their cupboard. Although you will need some manner of blender.
Ingredients
- 4 large rooster potatoes, peeled and chopped into cubes a few cm across
- 3 white onions, finely chopped
- 1 clove of crushed garlic
- 2 tbsp of butter
- 1 L of vegetable stock
- 350 ml of double cream
- 1 tsp of finely ground sea salt
- ½ tsp of fresh ground black pepper
Method
- Melt the butter in a large saucepan on low to medium heat, adding in the chopped onion and then the garlic.
- Cook those gently until the onions are translucent (you don’t want them to brown or worse, burn).
- Add the potatoes to the pot together with the stock, salt and pepper and simmer uncovered for 20 mins or so until your cubes are tender and break apart easily if you poke them with a knife.
- Take the pan off the heat, allowing it to cool a little before you pour in the cream
- Using your blender (stick blender, nutribullet, whatever you have), puree the mixture until everything is smooth.
- Season to taste with a little more sea salt or black pepper if you like. Thin the soup out with a little boiling water if it is too thick for your tastes.
- Heat it up when you are serving, with generously buttered bread, a sprinkling of cheese, chopped parsley, or chives if you fancy.
